Michael Mina's return to Washington, nearly two decades after Bourbon Steak landed in Georgetown. The James Beard Award-winning, Michelin-starred chef opened Acqua Bistecca in September 2025 at CityRidge, in a Nunzio Marc DeSantis-designed room built around a glowing, bottle-stacked bar and laid out for communal, dinner-party dining. The conceit is in the name: acqua and bistecca, seafood and steak, reframed through Italian convivality. Expect grilled fish over saffron-orange fregola, house-made pastas, and chargrilled steaks brushed with lambrusco butter, a longtime Mina signature, plus knowing flourishes like the caviar-and-mozzarella-stick opener. The Washington Post found it polished but cautious, a corporate-leaning take on surf and turf. For a confident, crowd-pleasing Italian evening rather than a daring one.
