Simon Kim's grandest project to date — the restaurateur behind Flatiron's Cote and the caviar-and-nuggets phenomenon Coqodaq — Bar Chimera opened in April 2026 on the ground floor of 550 Madison, Philip Johnson and John Burgee's postmodern landmark that once held the Quilted Giraffe. David Rockwell's design fills a 60-foot-windowed room with three standalone bars, each its own discipline: a pewter-topped martini bar, a moodier whiskey library of rare and everyday pours, and a wine bar running 42 by the glass. The kitchen plays brasserie — Chicken Paillard, the 550 Burger, crispy octopus, Wagyu corn dogs — beneath neon by Martin Creed. More buttoned-up lobby bar than the clubby Cote 550 below. Come for the martini, made with water filtered and re-mineralized.
