Born in Mexico with a résumé that runs from Mexico City to kitchens in Paris, chef Gerardo B. De Negri opened Cantina León in May 2026 with partner Jorge Barrera and Miami's Rabbit Group. The 7,500-square-foot, multilevel room — designed by Maxielle De Jesus of DesignXtudio around 1920s Mexico City cantina culture — runs to green velvet banquettes, brass and marble, and a central bar built to anchor the evening. With chef de cuisine Jorge Delgadillo, De Negri works a seafood-forward menu: shrimp aguachile tatemado, torre de mariscos, pescado zarandeado, and a filete flameado finished tableside. The bar leans into one of Miami's deepest tequila and mezcal lists, with live music Wednesday through Sunday. Come for cantina theater dressed properly for The Plaza Coral Gables.
