Indigo Road Hospitality Group — the Charleston outfit behind Oak Steakhouse, led by four-time James Beard nominee Steve Palmer — built this chophouse on a prominent Hannibal Square corner in the former Dexter's space, just off Park Avenue. Executive chef Nick Billings, Omaha-born and Orlando-raised, arrives by way of Grace Prime Steakhouse in Georgia and Mecha in Washington, D.C., pairing classic technique with a modern hand: Certified Angus Beef Prime cuts, Florida stone crab, bone marrow with Aleppo pepper, lobster tagliatelle in sauce Américaine. Designed by David Thompson, the room runs to warm wood, layered light, and a central bar built for martinis. The hospitality is deliberate — anniversary roses, named menus.
