The downtown nightlife duo Eytan Sugarman and Will Makris — behind Zero Bond and the revived White Horse Tavern — opened Dandelion in December 2025 at 115 Christopher Street, between neighborhood bar and after-dark hideaway. Franco Sampogna, of the Michelin-starred Frevo, oversees the food: oysters with sumac mignonette, bluefin tuna crudo with caviar, a prime rib-eye steak sandwich. The cocktail program, led by Keith Larry and John Garda, organizes drinks from easy highballs to a serious freezer-martini service finished with prosciutto, caviar-stuffed olives or Parmesan. E&E Creative designed the green-on-green room — a 17-seat marble bar, velvet banquettes, preserved dandelions, a wall of Leopoldo Goút works. Open until 2am. Come for a martini moment that holds the West Village past midnight.
