Opened March 2025 in Dallas' Design District, Evelyn is the Old Hollywood-themed steakhouse and lounge from Reach Hospitality, the group behind The Mexican. The 9,500-square-foot space, designed by ICRAVE (the firm behind Catch and STK), splits into three moods: the piano-anchored main dining room, the Ruby Room bar, and Room Seven, a late-night lounge beneath a disco-ball ceiling. Executive chef Henry Johnson, who represented Texas on Hell's Kitchen, runs a steak-and-seafood menu with caviar service, Wagyu cheesesteak bites, and seafood towers, alongside a martini program that climbs to a $150 caviar-olive pour.
