Toshi Kizaki — who, with his brother Yasu, opened Sushi Den on South Pearl Street in 1984 and effectively introduced serious Japanese cooking to Denver — calls this nine-seat counter his vision of retirement. Now in his seventies, he works the room himself four nights a week, guiding a roughly twenty-course edomae omakase ($225) from delicate snapper toward richer cuts of tuna, finishing in the traditional way with miso soup. The setting is its own argument: a dim, intimate room within the purpose-built Denchu, its Siberian elm counter set against black Brazilian limestone that nods to his hometown in Kyushu.
