Daniel Rose — the Chicago-born, France-trained chef who built his reputation in Paris with Spring before opening his first stateside restaurant in 2016 in collaboration with Stephen Starr — runs an unapologetically French kitchen here. The Roman and Williams-designed room, set within SoHo's 11 Howard hotel, frames whitewashed brick, pewter chandeliers, flickering candles, and a Dean Barger mural with an open kitchen at its center. The classics carry it: quenelle de brochet in lobster sauce, beef tartare, and Tout le lapin. Best New Restaurant at the 2017 James Beard Awards, and a holder of one Michelin star in the 2025 MICHELIN Guide New York. For a French room that downplays haute formality without losing it.
