Quincy Cherrett's first brick-and-mortar — a Culinary Institute of America graduate who built his Denver résumé as chef de cuisine at Colt & Gray and Death & Co. before running the kitchens at Sushi Den and Izakaya Den. Madeline opened in May 2026 inside the former Fruition space at 1313 East Sixth Avenue, the 48-seat room where Alex Seidel ran one of Denver's defining chef-driven restaurants for eighteen years. The contemporary American cooking is technique-led and seasonal, threaded with Asian accents: chicken liver paté, housemade pastas, oysters, a black sesame cheesecake served in a jar. The bar leans on Death & Co. logic, down to a soy-infused rye Manhattan. Named for Cherrett's niece, family-run, and unfussy by design.
