Kristyn O'Laughlin Eitel — the Milwaukee restaurateur behind BelAir Cantina and Fuel Café — spent four years building her first original concept, which opened in June 2024 at The Corners of Brookfield, an upscale lifestyle center west of Milwaukee. Executive chef Nick Aprahamian, a Milwaukee native who cooked in Las Vegas and most recently ran the kitchen at Mr. B's, cousin to James Beard winner Justin Aprahamian of Sanford, sends out a relaxed, modern read on the classics: French onion soup, mussels frites, hanger steak frites, bouillabaisse, and a fifteen-layer pistachio crepe cake. The room leans into its character with a mural by Emma Daisy and floral installations, design work by women-run studios. A self-assured suburban brasserie that knows exactly who she is.
