Justin Fulton — a Keystone, Colorado native who cooked at the Fearrington House, Natalie's at the Camden Harbor Inn, and Daniel in New York before returning home in 2020 — spent three years running Margot as a pop-up before opening it permanently in June 2025. It earned a Michelin star within months, recognized in the 2025 MICHELIN Guide USA. The room sits inside Toshi Kizaki's new Denchu building on South Pearl Street, a minimalist, Japanese-leaning space shared with Kizaki's own counter, plateware handmade by artisan Kazu Oba. Fulton's contemporary American cooking follows Colorado's seasons closely: Parisian gnocchi with mascarpone and caviar, dry-aged duck with cherries and truffle jus, and olive oil brioche baked per guest. Come for the eight-seat counter, where the chef works the pass and the menu shifts nightly.
