Johnny Curiel's first tasting-menu venture — the chef who, with his wife and partner Kasie, turned Alma Fonda Fina into one of Denver's most decorated tables since opening in late 2023 — anchors the couple's six-concept Fonda Fina Hospitality group. Opened May 13, 2026 in the TAXI complex on a sliver between the South Platte River and the rail lines, Milpero seats just eight guests per service across two nightly seatings. The 18-course menu is built almost entirely on heirloom corn grown for the restaurant through a partnership with Boulder's MASA Seed Foundation, nixtamalized in-house and carried through aguachiles, an uni tamal, and a bluefin flauta with red mole.
