Comma Hospitality's third Japanese concept, Oru opened in The Heights in December 2025 from co-founders and chefs Luis Mercado and Paolo Justo — the team behind the 10-seat Montrose omakase room Neo. Where Neo runs a fixed tasting, Oru reframes the format as à la carte: a 24-seat hinoki counter beneath a vaulted ceiling, in a modernist ebony gable-roofed building whose tunneled lighting isolates each plate. The kitchen pulls signatures off Neo's menu while folding in Texas barbecue and a zero-waste ethos — barbecue-spiced dry-aged trout, Mercado's madai with recado negro, the wagyu lumpia, and banana-and-caviar ice cream. A French-leaning wine, sake and Japanese-spirits list rounds it out. Come to set your own pace at a counter that trusts the guest to compose the meal.
