Three lifelong friends from Paris built this 24-seat handroll counter in Wynwood around chef Yasu Tanaka, the Tokyo-born sushi chef whose Design District flagship, Sushi by Yasu Tanaka, drew them in at MIA Market and earned Michelin Guide recognition. The format trades omakase ceremony for something faster and more social: a paper-and-pencil menu of single rolls, warm rice and crisp nori assembled across the counter, with signatures running to toro and caviar, A5 wagyu, and uni. Rudy Guenaire's room reads part Tokyo minimalism, part Parisian bistro. The French thread carries through to dessert by pâtissier Yann Couvreur, whose Wynwood cafe sits steps away. Come for handrolls built with omakase precision and none of the hush.
