Scott Sartiano's Manhattan original lands at Wynn in March 2026 as an Italian steakhouse, the second act of the SoHo Mercer restaurant. The culinary director is Alfred Portale, the three-time James Beard Award winner and New American pioneer of Gotham Bar & Grill; Las Vegas native Michael Rubinstein, formerly of Momofuku, Vetri Cucina and Majordomo, runs the kitchen day to day. Tihany Design and Wynn Design & Development shaped the mid-century-modern room — arched ceiling, terrazzo floor — tucked in an alcove over the 18th hole of the Wynn Golf Club, beside the private Zero Bond club. The signatures travel from New York: golden osetra caviar cannoli, paccheri Sunday sauce, a 40-ounce dry-aged bistecca alla Fiorentina carved tableside. Upscale resort attire.
