Michael Vignola — the Chopped champion who ran Strip House and Bills Bar and Burger for BR Guest Hospitality and shaped Catch Steak — leads this intimate West Village steakhouse from Catch Hospitality Group, the team behind The Corner Store. The address carries weight: 86 Bedford Street is the former Chumley's, the Prohibition-era speakeasy where the term "86" was born. Rockwell Group designed the jewel-box room in Art Deco detail, roughly ten tables behind an unmarked door. Beef is the throughline — sourced from small independent ranches, dry-aged in-house, anchored by the 30-day dry-aged ribeye and a porterhouse for two carved tableside, with theatrical cocktails like the tableside smoked martini. Reservations release two weeks out and vanish fast. For one of the city's hardest tables, where the room is as much the draw as the steak.
