A second-floor speakeasy above Fern In The Wild, the modern-American restaurant and coffee shop on West Knox Street in downtown Ennis. Entry is part of the appeal: a staircase concealed in a mural by day, and after 8pm, lanterns marking the way through the alley. The bar runs deep on bourbon, scotch, gin, tequila and rum, with a Tiki streak and house riffs like a honey-laced old fashioned; beer, wine and mocktails round it out. The dress code reads upscale-casual rather than precious, and a small private room, the Aviary, seats eight. Open Wednesday through Saturday, evenings only. A considered cocktail room for a Texas town better known for bluebonnets.
