Opened in May 2026 inside TriPointe Plaza in Tampa's Westshore District, The Sapphire is a 17,000-square-foot supper club and lounge built on the format of the 1950s. The room runs to a large stage, a 12-foot LED wall, an LED dance floor, and multiple bars, with nightly live bands and DJs. The kitchen is led by chef-partner Taro Larrea, the Tablas caterer who captained Team Tampa to a Food Fight win for Metropolitan Ministries, working a Venezuelan-Spanish register across oysters, crudo, prime cuts, grilled Spanish octopus, and lamb chops. Managing partner Stephen Hickey, a Tampa native, came from the city's first Eddie V's. Signature cocktails arrive tableside from roaming carts. Come late, when the live sets give way to DJs.
