Yasu Tanaka built his Miami following at Sushi Yasu Tanaka, the nigiri counter inside MIA Market that earned a Michelin Guide recommendation and New Times' Best Sushi honors. His path ran through Azabu in New York and that group's hidden South Beach room, The Den, before this eight-seat counter opened in the Design District's Paradise Plaza in January 2025, in partnership with Spicy Hospitality Group. The centerpiece is a 600-year-old hinoki slab from Mie Prefecture, polished daily with rice bran, set among kumiko woodwork and Yamanashi ceramics. The roughly $250, 14-to-16-course menu pairs Toyosu Market fish with Florida coastal catch, Niigata rice, and house-blended soy. Come for an omakase that trusts the chef completely.
