Stephen Hopcraft has run STK at The Cosmopolitan since the 2014 opening — a Bravo Top Chef Season 9 alum with Vegas resort-steakhouse background before the STK seat. The ONE Group's scene-leaning DJ-energy frame doesn't soften the kitchen: A5 wagyu and Japanese / Australian cuts run alongside the standard prime program, and the bar-bites menu reads disciplined under the noise.
