Yoshiyuki Inoue's basement Little Tokyo counter is the closest LA gets to Tokyo's small, formal omakase rooms — 10 seats, no music, no menu, just the chef's nightly selection of fish sourced primarily from Toyosu. Edomae technique applied with quiet seriousness. Two Michelin stars and one of the city's hardest reservations. For sushi as ritual, not entertainment.
