Richard Chen runs Washing Potato as the dim sum companion to Chyna Club at Fontainebleau — same Alan Yau concept architecture, same Wing-Lei-Michelin pedigree (2008-2009 era when the Las Vegas Michelin Guide ran), both opened December 2023. The room is a theatrical black-box space designed around the dim sum cart progression; Chen's program runs upscale Cantonese dim sum with the same care that earned him his Wing Lei star. The name is the only thing that sounds like novelty — the program is serious dim sum at a price point lower than Chyna Club.
